PROSECCO BRUT

The Prosecco Brut is clear and light, with compact bubbles. Wide and fruity, reminds us of yellow apple, peach, wisteria and acacia flowers. It has balance and elegance together with aromatic notes of great freshness.

At the palate its is fresh and at the same time soft, with creamy and crunchy bubbles with small aromatic notes at its ending. Well bodied with good roundness and permanence, it has a perfect correspondence with its aromas and great armony.

Vinification

Handpicking of the grapes’ whole bunches and subsequent soft pressing with pneumatic press, cold static settling of the must, racking with inert gas and fermentation at controlled temperature (17-19°C) with selected yeasts. Refinement and maturation in contact with fine lees for five months in steel containers with weekly stirring to bring the single cellular yeast components into suspension.

Second fermentation: Martinotti or Charmat method in steel sealed tanks. 

Second fermentation temperature: 15-17°C with subsequent tartaric stabilization (-2°C). Microfiltration before the bottling to disgorge the lees from the refermented wine.

Cycle duration: around 80 days.

Serve: chill to 7-8°C just before serving.

Recommended glass: a medium wine goblet. Champagne flutes are best avoided as they may display perfectly the perlage, but they prevent the bouquet from developing to its full potential.

Storage: in a cool and dark place. Do not keep in the refrigerator for long periods.

Drinking period: within a year of its isobaric bottling. Hoeever, in following years, if stored correctly, the intensity of the fruity flavours and bouquet will make a way for greater complexity on the nose and palate, which can reserve a few pleasant surprises.
