Inside a natural bight of the river Sile in Treviso, without the usage of pesticides, this straw-yellow coloured Prosecco is born, with thick and persistent perlage.

Its characteristic is that of a wine apt for the duration of the entire meal.

Highly intense olfactory perceptions with notes of ripe fruits (apricot, peach, yellow apple and melon) express balance and fineness together with notes of great freshness. At the palate it is pleasantly sour, fresh and fruity.

Vinification

Handpicking of the grapes’ whole bunches and subsequent soft pressing with pneumatic presses, cold static settling of the must, fermentation at controlled temperature (17-19°C) with selected yeasts. Refinement and maturation on fine lees in steel containers for four months.

Second fermentation: Charmat method in steel sealed tanks. 

Second fermentation temperature: 16-18°C with subsequent tartaric stabilization (-2°C). Sterile tangential filtration before the bottling to disgorge the lees.

Cycle duration: around 60 days.

Pair with: Aperitifs and toasts accompanied by different snacks and salty finger food.

Serve: chill to 7-8°C just before serving.

Recommended glass: A medium wine goblet. Champagne flutes are best avoided as they may display perfectly the perlage, but they prevent the bouquet from developing to its full potential.

Storage: store in a cool and dark place. Do not keep in the refrigerator for long periods.

Drinking period: The complexity of this wine is best appreciated if drunk within 8-10 months of its isobaric bottling.
